YUM: Wild West Virginia Raspberries!

You may laugh, but I sometimes think how lucky I am to live in a state in which I could likely survive should there be some kind of global disaster that would require me to find my own food. (That would be wild and wonderful West Virginia.)

Case in point: the other day when I pulled into work and parked my car, I noticed there was a fully-fruited wild raspberry bush straight in front of me. (Keep in mind that I work on top of a wooded hill.)

So yes, call me crazy, but I dragged my six year old son back to it after work so we could harvest it. Why let that organic goodness go to waste?

Here is a picture of my yummy spinach and raspberry salad that resulted. Mmmmmmmm....

Yes, it was a very simple salad, I admit. But you can get away with that when you have fresh, wild raspberries. (Plus, I didn't have any walnuts or gorgonzola on the shelves obviously. Will have to look more closely around the neighborhood and see if there are any walnut trees. There IS a goat in my neighborhood, so I may be in luck with the cheese. ;)

When my friends and I were camping in the New River Valley a month or so ago, we also came to the conclusion that West Virginia would be the perfect place to go if there is some kind of global disaster. We decided that if there is a nuclear war or zombie apocalypse, we're heading straight to the New River Gorge.
